Banana Chocolate Chip Cake Recipe

Children adore this recipe, and of course so will you.

Bananas got too ripe? Don’t even think of chucking them! Make a banana chocolate chip cake!

You will find they make the greatest smoothies, muffins and cakes, their flavor reaching their sweetest and most intense peak! The riper the better: freeze them, and when ready to use run them under warm water, the peel will come right off.

Gluten-free Banana Chocolate Chip Cake: Use any GF flour, and add 1 teaspoon xantham gum to the batter; bake in an 11 x 14 inch pan or in 2 dozen muffin molds (about 45 minutes baking time).

Mixed Grilled Vegetables Recipe – Pasta Variation

Mixed grilled vegetables are one of my favorite go-to dishes.

Everyone loves a plate of grilled vegetables, to eat as is or to use as a filling for sandwiches. I have chosen to share the most ridiculously simple way. First of all, please don’t find me disingenuous: Some of us, including yours truly, were not blessed with a backyard or porch or any outdoor cooking amenities whatsoever, so my “grilled” vegetables are roasted at high temperature in one layer, and just as delicious as grilled, requiring no turning over and no maintenance. Second, the trick is to combine your veggies according to their cooking time.

To the basic selection below, you can add string beans, asparagus, endives, radishes, Brussels sprouts, and fennel; but you will roast carrots, sweet potatoes, parsnips, potatoes separately because they require a longer cooking time. Roast beets all by themselves so they don’t bleed into your other veggies, or use the wonderful golden beets now available at all good produce stores. For all roasting, remember, one layer, no piling! Lining the baking sheet with foil reduces, or sometimes even eliminates, cleaning.

When the vegetables are roasted, go ahead and get a little fancier if you wish: toss in a little olive oil, chopped fresh basil, a few drops of balsamic vinegar, and a little ground pepper. Most often, I add nothing at all: It’s that good!

Variation- Pasta with  Mixed Grilled Vegetables:

Dice your grilled vegetables , and toss them with 1 pound cooked pasta of your choice. Serve hot or at room temperature.

Cherry Clafoutis Recipe: Gluten-Free Friendly

 Cherry Clafoutis is a delightfully rustic baked French fruit dessert

Comfort Foods A La French. It is traditionally made with berries or cherries, but often made with apples as well, arranged in a tart pan and covered with a thick flan-like batter. You will love the no-fuss prep and the quick healthy results!

My Cherry clafoutis is a winner:

very lightly sweetened, fragrant and totally gluten-free-friendly, and very easy to make. I love  how the cherries float to the top during baking. I have taken some poetic license and added an optional light chocolate topping to my cherry clafoutis recipe (the picture clafoutis doesn’t have a chocolate topping), just because berries and chocolate go so beautifully together.

Pickled Salmon Recipe

Pickled Salmon recipe: Please don’t gasp! Pickled salmon pickles much the way herring and pickles do, in a brine. The combination of vinegar-salt-sugar cures the fish quickly and effortlessly. The ketchup imparts wonderful color and a pleasing sweet-and-sour flavor to the pickled salmon. No, there doesn’t seem to be a limit on how many hats salmon can wear: All delicious, all quick, all healthy!

Pickled salmon recipe is delicious alone, with tiny boiled potatoes or on top of mixed greens.

Quick Moroccan Vegetarian Bean Soup Recipe.

Vegetarian Bean Soup:

Another delicious all-vegetarian and inexpensive Moroccan soup, done the quick way.

Comfort food at its best. Unlike on my personal blog, I am using canned beans in this vegetarian bean soup recipe, as the theme of this whole recipe section is to get a perfect meal even when we are short on time.
